Ingredients:
- 2 cups all-purpose flour
- 1 cup powdered sugar
- 1 cup desiccated coconut
- 1/2 cup semolina
- 1/4 cup ghee
- 1/4 cup milk
- 1/2 tsp cardamom powder
- Oil for deep frying
Instructions:
- Mix flour, semolina, ghee, and milk to make a stiff dough. Cover and let it rest for 30 minutes.
- In a separate bowl, mix powdered sugar, desiccated coconut, and cardamom powder to make the filling.
- Divide the dough into small balls and roll them out into small circles.
- Place a spoonful of the filling in the center of each circle and fold it over to form a half-moon shape. Seal the edges by pressing with a fork.
- Heat oil in a deep frying pan and fry the Karanjis until they are golden brown and crispy.
- Remove from oil and drain on paper towels.
- Serve Karanjis warm or at room temperature.
