Golgappa Recipe



Ingredients:

  • 1 cup Semolina (Sooji)
  • 1/4 cup All-purpose flour (Maida)
  • 1/4 tsp Baking soda
  • Salt to taste
  • Water as needed
  • Oil for deep frying
  • Various fillings (potato, chickpeas, tamarind chutney, etc.)

Instructions:

  1. Mix semolina, all-purpose flour, baking soda, and salt in a bowl.
  2. Add water gradually and knead to form a stiff dough.
  3. Cover the dough and let it rest for 20-30 minutes.
  4. Divide the dough into small balls and roll them into thin discs.
  5. Heat oil in a pan for deep frying.
  6. Fry the discs until they puff up and turn golden brown.
  7. Remove and drain excess oil on paper towels.
  8. Let them cool and then gently poke a hole in the center of each golgappa.
  9. Fill with your favorite fillings before serving.
