Golgappa Recipe
Ingredients:
- 1 cup Semolina (Sooji)
- 1/4 cup All-purpose flour (Maida)
- 1/4 tsp Baking soda
- Salt to taste
- Water as needed
- Oil for deep frying
- Various fillings (potato, chickpeas, tamarind chutney, etc.)
Instructions:
- Mix semolina, all-purpose flour, baking soda, and salt in a bowl.
- Add water gradually and knead to form a stiff dough.
- Cover the dough and let it rest for 20-30 minutes.
- Divide the dough into small balls and roll them into thin discs.
- Heat oil in a pan for deep frying.
- Fry the discs until they puff up and turn golden brown.
- Remove and drain excess oil on paper towels.
- Let them cool and then gently poke a hole in the center of each golgappa.
- Fill with your favorite fillings before serving.
